Caribbean Jerk Salmon

Let’s begin by gathering our ingredients for Caribbean Jerk Salmon

Ingredients:
1 salmon fillet
1/2 cup olive oil
1/4 cup lime juice
1/8 cup lemon juice
2 garlic cloves
1 jalapeño
1/2 cup diced sweet onion
3 green onions
2 tablespoons grated ginger
2 tablespoons brown sugar
1/2 cup juice nectar
1 tablespoon chopped thyme
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground clove
1 teaspoon allspice
1 teaspoon kosher salt
1 1/2 teaspoon pepper
1 mango
1/2 red bell pepper

Chop mango, 1/2 red bell pepper, 3 green onions, jalapeño and 1/2 cup sweet onion to food processor. Pureé ingredients.

Add the rest of the ingredients to the food processor including 1/2 cup olive oil, 1/4 cup line juice, 1/8 cup lemon juice, 2 garlic cloves, 2 tablespoons grated ginger, 2 tablespoons brown sugar, 1/2 cup nectar, 1 tablespoon thyme, 1/2 teaspoon cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground clove,  1 teaspoon allspice, 1 teaspoon salt and 1 1/2 teaspoon pepper. Pureé ingredients. Let stand for 25 minutes.

Preheat grill to low. Put salmon fillet on grill, brush on sauce. Grill one side for 15 minutes.

Flip salmon and remove skin. Brush on more sauce. Grill for another 15 minutes.

Flip one final time. Add more sauce and grill for 5 minutes.

Remove from grill and plate to serve!
