King Salmon with Pesto al Rigatoni comes from Chef Ludger Szmania – he prepared this dish the last night of Hook It & Cook It 2014. Ludger will return in 2015 to share his talents of preparing delicious, fresh seafood for guests in attendance. King Salmon with Pesto al Rigatoni

 

Let’s begin by gathering our ingredients for King Salmon with Pesto al Rigatoni:

Ingredients:
1.5 pounds king salmon
½ cup onions, finely chopped
1 cup celery, cut into 1” pieces
1 tablespoon garlic
2 cups white wine
1 cup pesto
4 cups rigatoni
olive oil
chili flakes
salt

Cook rigatoni – boiling water until al dente. This will take about 5 min or as instructions indicate on package.

Sauté sweet onions, celery, and garlic in 2 tbsp olive oil over high heat for about 2 minutes. Then add 2 cups white wine, let reduce for about 3 minutes. Then add the pesto and some chili flakes to taste. Then season with salt and add the salmon. Let simmer for a minute or two (salmon should be rare) then add pasta and stir gently. Check the seasoning – you may need to add more salt and chili flakes. If too dry, add a splash of water.

Plate to serve. Enjoy!
