Recipe of the week: Quinoa Salmon Pilaf

Quinoa-Salmon-Pilaf

Let’s begin by gathering our ingredients for Quinoa Salmon Pilaf:

Ingredients:
1 salmon fillet
1 tablespoon white wine
1 cup quinoa
olive oil
1 small onion, diced
1 garlic clove, minced
7 mushrooms, sliced
three handfuls spinach
feta cheese
salt & pepper

In a saucepan, place quinoa, 2 cups of water, and white wine and bring to a boil. Add skinned salmon. Season salmon with salt and pepper. Reduce to a simmer, and cover. Cook until all liquid is absorbed, for about 10 – 15 minutes.

Heat a 2 tbsp olive oil in a skillet. Add 1 small chopped onion and 1 minced garlic clove and sauté until onions are soft. Add mushrooms and sauté. Finally add spinach and sauté until the spinach is completely wilted. Season with salt and pepper.

When the quinoa is done, turn off the heat. Flake the salmon with a fork. Mix with the quinoa. Add the vegetables and mix again. Season with salt and pepper. Then plate to serve and cover with feta cheese. Enjoy!
