Let’s begin by gathering our ingredients for Tempura Halibut:
2 halibut fillets
1 cup flour
2 tablespoons cornstarch
1/2 teaspoon salt
1 cup beer
1 egg yolk
2 egg whites
Mix together 1 cup flour, 2 tablespoons cornstarch and 1/2 teaspoon salt.
Combine 1 cup beer and 1 egg yolk.
Combine beer and egg mixture with flour mixture. Slowly stir – few lumps should remain. Add egg whites.
Cube halibut and heat oil to 400º.
Dip halibut in batter, coat well. Place a few pieces in hot oil. Cook at 400º for about 5 minutes. Remove and drain on plate with paper towel.
Plate to serve. Enjoy with sweet and sour sauce or tempura dipping sauce!
