Gather your ingredients:
2 halibut fillets
1 cup homemade breadcrumbs
4 tablespoons olive oil
1 small package crumbled feta cheese
4 teaspoons dijon mustard
1/4 teaspoon black pepper
1/2 teaspoon minced garlic
small handful chopped basil
Combine basil, garlic, pepper, breadcrumbs, oil and feta in a bowl.
Mix ingredients together in a bowl. Cut halibut fillets in half. Place in oiled baking dish.
2. Place 1 teaspoon of dijon mustard on each piece of halibut.
3. Spread dijon mustard over halibut.
4. Spread topping mixture over halibut.
Bake at 400 degrees for 15-20 minutes uncovered. Remove from oven once halibut is cooked through.

I made this with a few changes based on what I had handy – mayo instead of Dijon mustard, dried basil and garlic powder. Still really yummy! I used the extra topping on zucchini spears and baked them. Great recipe, although anything tastes good with fresh Sitka fish. 🙂
