Panko Parmesan Crusted Halibut


Let’s begin by gathering our ingredients for Panko Parmesan Crusted Halibut:


2 pounds halibut
olive oil
lemon juice
1/2 cup panko
1/4 cup Parmesan cheese
1 tablespoon parsley
1/2 teaspoon garlic powder
salt and pepper
cooking spray

Cube halibut and drizzle with olive oil and lemon juice. Preheat oven to 450º.

Combine 1/2 cup panko, 1/4 cup Parmesan, 1 tablespoon parsley, 1/2 teaspoon garlic powder, salt and pepper to taste in a bowl.

Line baking sheet with foil. Spray foil with cooking spray. Dredge halibut cubes in breading mixture, then place on foil. Refrigerate fish for 20 minutes to ensure breading doesn’t fall off while cooking.

Spray top of each cube with cooking spray, then place fish in oven. Bake for 10-15 until flaky and golden brown. Over cooking will dry out halibut.

Remove from oven and serve with lemon or dipping sauce.
